Quinoa Shrimp Salad

People who know me well know that I'm not a huge fan of working out. 

I'll exercise and participate in local 5K's but by no means will I go into the gym only to never want to return  because I worked myself to the bone.

With that said, I'm more of a healthy eating/lifestyle kind of person. I'll take the stairs, pass on the sweets, opt to walk etc. At home, I'm all about cooking or preparing my own meals, this is the perfect example of something I'll devour!

It took me about 15mins to cut all the veggies. The quinoa I made in a steamer so that was a good 45 mins but for the most part it was easy.  

    Ingredients:   1 cup of Quinoa   1/2lb of shrimp (or chicken)   1/2 Red & Yellow Pepper   1 yellow squash   1 tablespoon Sunflower seeds   2 handfuls of Argula   Dressing: 1 lime (squeezed) mixed with balsamic vinegartte   

 

Ingredients: 

1 cup of Quinoa 

1/2lb of shrimp (or chicken) 

1/2 Red & Yellow Pepper 

1 yellow squash 

1 tablespoon Sunflower seeds 

2 handfuls of Argula 

Dressing: 1 lime (squeezed) mixed with balsamic vinegartte
